Then I found the Knob Creek 9 Year on sale and, partly due to the 120 proof, it rocketed into my top-10.

On the nose: Starts surprisingly fresh, with spring flowers, dew-dampened grass clippings, and some lightly sweet scents of confectioners’ sugar. Nor would I describe myself as anything of a Knob Creek fanboy; it misses the mark on occasion, at least for my palate. We combined our widely praised Neat Glass with one of our 3oz Flight Bottles and housed them together in a custom EVA travel case. Knob Creek is an American brand of Kentucky straight bourbon whiskey produced by Beam Suntory (a subsidiary of Suntory Holdings of Osaka, Japan) at the Jim Beam distillery in Clermont, Kentucky. There are notes of melted salty butter on granary toast, there are notes of toasty oak and a touch of rye with caramel sweetness.

The palate has elegant fine-grained tannins and an incredible texture that supports a lovely earthy, truffle-like complexity. Going back to the first part of this review: I’m thinking about others who are perhaps earlier in their whiskey journey. A desire to recreate a style and standard of bourbon that existed prior to this state of affairs was the motivation for Noe to establish Knob Creek as a brand.
