The Flair Signature PRO has a brew group that performs all of the functions of a lever espresso machine. I was finding the flow on the slow side to begin with, and therefore the Espresso over extracted, and when I went more coarse it didn't seem to help, but I wasn't quite going course enough it would appear, and issues I was having with dosing didn't help.
The stand, base, and brew group parts are solidly built to last and the cast parts eliminate extra metal so the kit doesn't add excessive weight to luggage. Watch the gauge to see that the pressure has released but also keep the lever engaged while easing pressure. One of those is a lever that engages the piston with a wheel to transfer force across a flat surface. My vintage Trosser box grinder works with my Arrarex Caravel lever, but it won't adjust fine enough for the PRO.The travel case is well made, robust, and doesn’t cut any corners, as so many cases do for various things in life. Pressure inside the brew chamber is in all directions, so the pressure exerted through the coffee bed is unaffected. The warranty becomes void if the product or parts are modified, abused or improperly used, damaged by accident or neglect, or if any parts are improperly installed. Although the look of the PRO would be very different with a redesigned lever, the downward curve is a minus under higher pressures.
With a little attention to technique you can reduce the flexing of the cylinder on the portafilter and make the pull smoother.Another method used was kind of squatting down, and pulling down on the lever from overhead, which I’m sure looks funny, but allows me to see the extraction, easily see the gauge, and still use my body weight to manage. I found the most natural method to kind of do the lazy lean into it with your upper body method, like many do with the aeropress, but the downside to it is you need a mirror to see if your extractions are even or when you reach the blonding point. I was well aware of the PRO 2 when I first got the signature, and I still don't regret following the upgrade path, and might even have increased my appreciation of the PRO 2's qualities.
It is therefore definitely worth the investment in my opinion, even after a (more costly) upgrade process. Overall, I believe the Flair Signature PRO is a successful design for pulling controlled shots of fine espresso. For light* roasts I grind very fine and may dose as low as 14 gm, filling the cylinder with the piston positioned at the top.I wrote The Rok Espresso Maker review a few months ago, and in this post, I promised to also review the Flair Espresso, which is the latest invention of this type of manual non-electric espresso maker, so here it is – better late than never ;-).
