The skills of the still-man, required to judge the moment at which the Scotch malt and the Scotch grain spirit is ready to be collected, are crucial to the art of distilling. This Scotch Whisky is sweet and rich and has the subtle smoke characteristic of Jura's excellent Island single malts. The sherry finish ebbs and flows, sometimes adding a richness to the fruit that adds some berry and cherry notes to the already clean apple or pear, each taking their turn in a delightful dance. A whisky only Jura could make, born of our island and still produced today in a bottle originally shaped to withstand the roughest of journeys from our home.

The crucial process involving the distinctive swan-necked copper pot stills, where distillation separates the alcohol from the wash. The palate follows the nose with a narrower band of apple or bear to go along with a dash of brine before dissipating with a frisson of light smoke and pepper. Smoke from the fire drifts gently upwards through a wire mesh floor to dry out the barley, and the “peat reek” imparts a distinctive aroma which contributes to the character of the final spirit. Today, almost every family on the island has a member who works in our distillery, with our distillery or in whisky-related tourism.

In 2018, the complete core line of Jura was retired as the distillery decided to move in a new flavor direction. Matured in American White Oak ex-bourbon barrels for 10 years and finished in Oloroso Sherry casks from Jerez, Spain. Since 1810, this unique island malt has been our greatest endeavour and our greatest reward, its creation on the heart of an unbreakable bond between our Island, our people and our whisky. The still-man raises the temperature within the wash still and gradually, the fermented liquid is heated and the alcohol in the wash vaporises.Crafted in uncommonly tall stills, matured in the fresh sea air and American white oak bourbon barrels and finished in the finest aged Oloroso sherry butts.
