About this deal

The sauce itself is more like a chilli con carne in consistency and I’m not saying that it can compete with an authentic Oaxacan mole. Do I replace some of the chocolate or still stick to 300g or chocolate and add walnuts on top of that? Do you think this recipe would work as an ‘all in one’ method with people adding their own butter and egg?

The garnishes are different but its exactly the same recipe for the duck leg, so why not group them together? They can sometimes need flattening a bit, but the rawness does go away once cooled for the minimum of 30 minutes! The combination of pan-frying the chicken as well as simmering it in the sauce gives a delicious golden coating with a succulent meat on the inside.Baked these on Friday after my fiancé managed to source us some plain flour (hallelujah) and they were absolutely amazing! Garlic and onion, sweet mustard, sour cream and chive, sweet chilli, satay, tzatziki, taramasalata, baba ganoush…the list goes on. I found if frozen for more than the 30mins time (like properly frozen) they don’t flatten much and need a slightly longer bake – I added an extra 4 mins (rangemaster oven) – still absolutely gorgeous cookies.

Ramsay is a familiar figure on TV both sides of the Atlantic with shows including Hell’s Kitchen, Masterchef, Masterchef Jr. The book’s co author is Restaurant Gordon Ramsay Chef Patron Matt Abé who has worked for Ramsay for 16 years. Park and Choi offer an extensive forty-page introductory section exploring the concept of hansik , or Korean cuisine. Gave them out to a few families nearby (with social distancing and very careful when making them) and they absolutely loved them! Starting with banchan – side dishes served alongside rice – we are presented with plenty of bright vegetable dishes and a select few for carnivores (who are given a much broader selection to choose from in a later section of sharing platters). This can be a number of things, but probably not to do with the chocolate as long as you used the correct amount! Having made the decision to use only what I had in the cupboards and fridge, the mole I made included minced beef. And, frankly, if that is what you’re looking for, we’re probably only six months out from a six-part BBC2 series and accompanying book: Rick Stein’s Korea . I used a bar of chocolate cut into chunks rather than chocolate chips but the result was still amazing! I’m just wondering if I were to leave these in longer would the middle go a little more crispy, or have you a recipe up that I’m just not seeing maybe.

Once you’ve got those boxed up, all you need to do is trim 2kg of veal heart sweetbreads (they were all out at Asda but I’m sure you can track them down at your local butcher. I’ve made these so many times before, and I have just made a batch today ready to bake tomorrow for my daughters first birthday celebrations on Saturday 🙂 I’m even baking batches for my DPD man/men for Christmas as a thankyou! W⁴e only had white and milk chocolate but will be trying different combinations as it would be rude to not make them again! I’ve also froze spoonfuls of nutella and wrapped them in the cookie dough before cooking to give a chocolate chip cookie with a gooey chocolate centre…a big crowd pleaser. If you want a lovely texture - you can add in 1 level tbsp of cornflour, and take out 25g of the flour! That first recipe I tackled however turned out to be a bit more involved, but I couldn’t resist the idea of the sweet and sour tomatoes (marinated in honey, coriander seeds, rosemary, garlic, vanilla and sherry vinegar) that accompanied slow cooked beef cheek (I substituted some very nice braising steak) with courgettes, fried polenta, aubergine caviar and balsamic vinegar sauce made from the braising liquor. And look, it’s a busy book – filled to the brim with tips and adjustments for different dietary needs – but the dishes are usually easier than they look. I was just wondering if this recipe could be used to create one large cookie as I know my daughter would love that instead of a cake as she enjoyed then so much!
