About this deal

The above image shows what the finished salami made without special equipment will look like. You can see that it doesn’t have a casing, but it does have the right color and shape. When sliced, it has a very artisinal charcuterie look to it that I think you’re going to really like.

As a hobby sausage maker, you are quite well served with Bactoferment 61 or a similar one without additives. Hui, Y. H, ed. (2007). Handbook of Food Products Manufacturing. doi: 10.1002/0470113553. ISBN 978-0-470-11355-4.

Genoa salami : Traditionally prepared with salted meat (veal and pig), Genoa salami is seasoned with pepper, garlic, and red wine. The wine seasoning gives it a fermented, tangy flavor. This salami is considered dried sausage, though it has a softer, fattier texture than other meats. After fermentation, the sausage must be dried. This changes the casings from water-permeable to reasonably airtight. A white covering of either mold or flour helps prevent photo-oxidation of the meat and rancidity in the fat.

IMPORTANT: This only applies to white mold to a small degree. If you are unsure, better throw your salami away and don’t experiment. Can I make my own salami without cure and starter cultures? Although dry salami is a nutrient powerhouse, it shouldn't be a mainstay at every meal. If you’re a salami lover, I recommend you enjoy this processed meat in moderation as part of a well-balanced diet. Eren, Hasan (1999). Türk Dilinin Etimolojik Sözlüğü (in Turkish). A serving of the turkey sausage equivalent contains 70 fewer calories, 8.5 fewer grams of fat and 3.5 fewer grams of saturated fat. It contains roughly the same amount of sodium, cholesterol and protein. So there’s certainly a marked nutritional difference between pork sausage and turkey sausage, and that difference isn’t relegated just to the Johnsonville brand. For example, Applegate, a company that specializes in natural and organic meats, has a similar discrepancy between their turkey and pork sausage. Turkey sausage is typically going to represent a serious nutritional upgrade over pork sausage. However, just because one product is better than another doesn’t necessarily mean its healthy. Pepperoni is a spicy sausage with chili, cayenne, and paprika. The paprika spice is what gives pepperoni its reddish color.

Nutrition Proper nutrition provides athletes with the energy, nutrients and hydration they need to progress in their training and perform optimally. In addition to following a healthy diet, athletes must pay particular attention to gaining muscle and losing fat, which together improve athletic performance. To power workouts and games, and to ensure a strong recovery, elite athletes take care to eat properly and to hydrate before, during and after workouts and competitions. In some situations, athletes gain an edge with prescribed use of safe supplements. Learn how elite athletes supercharge their performance by following scientifically-supported nutrition strategies. That turkey sausage is significantly lower in saturated fat than most breakfast meats is also an advantage. Eating too much-saturated fat drastically increases your risk of high cholesterol, which in turn can have a negative impact on blood flow and oxygen transportation throughout the body. The American Heart Association recommends that no more than 6% of your daily calories come from saturated fat. For a 2,000-calories-a-day diet, that translates to a limit of 13 grams of saturated fat each day. Since most turkey sausages contain one or two grams of saturated fat per serving, including them in your daily diet is manageable. The lower fat content of turkey sausage is also a big plus for athletes who have morning workouts or practices, since high-fat foods (like pork sausage) sit in the stomach longer, take several hours to digest and leave you feeling bloated and sluggish. Sodium Content Place the cylinders of meat onto plastic wrap and roll tightly burrito-style, folding in the sides of plastic and then rolling it up tightly.Healthy and low calorie. Turkey sausage is high in protein and low in fat and perfect to include as part of a weight loss or low-carb diet.
