Plenty of rice and noodle dishes, and plenty of dishes using seafood, poultry, beef, and pork. Included are soups and stir fries, sandwiches and appetizers, as well as basics and sauces. Anyone who knows the importance of fish sauce in their Vietnamese and Thai dishes, will want a copy of this book. Highly recommended.

It is a little saltier than most, with 1670 mg of sodium per tablespoon, so if you're watching your salt intake, you may want to go with another brand. But because of this, it is the brand that I now use for my recipe testing to ensure that if you follow my recipe using a different brand of fish sauce, you're not going to end up with something that's is too salty; which is something you cannot fix.

Boats and historical events are what make me love reading. Could you please share the sequel books of your series? Some brands use a "degree N" number to indicate the amount of protein in the fish sauce, for example Red Boat indicates 40°N while Megachef indicates 30°N. The higher the number, the more protein. The book is very much geared to the US market in the use of food language and ingredients such as tapioca flour, baking soda, cilantro, kosher salt, zucchini, eggplant and scallion. Most are quite widely known in the UK though and easily found/understood if not immediately obvious. Less hard to know what they are or to source are things like perilla, rau ram, taro, wood ear mushrooms, bitter melons and morning glory (rau muong) - or so I thought until I popped into a local Asian specialist food store the other day and found bitter melons and morning glory. How exciting - my repertoire of recipes I can try from this book has now increased and I look forward to using the book a lot. It does contain hydrolyzed vegetable protein which is a flavour enhancer, not unlike MSG, so it breaks my "simple ingredient list" rule. But it still tastes good so I make an exception for it. Five stars. Five stars. Five stars. This is a beautifully warm and welcoming family cookbook filled with good food. One of the best American cookbooks I've seen in a while.

It's the main salting agent in traditional Thai cuisine, and is widely used in many Southeast Asian countries such as Laos, Vietnam, and the Philippines. You can see from the jar on the left, below, what the anchovies and salt look like after they’ve been marinating in salt for a short time.When I first spent a month in Southeast Asia I fell in love with the food. The flavors were unlike anything I had ever experienced and I wanted to take home as much of that as I could. The best I could do was some dry herbs and recipes that I collected throughout my trip. I could never quite duplicate it the way it was there and attributed that to two things: it ALWAYS tastes better when someone else is cooking, even if you follow their recipe to the letter, and the ingredients at home were just not on the same level. That’s when a friend introduced me to Red Boat Fish Sauce. It was the start of my journey to getting as close to the original recipes as I could. I saw what he meant when we pulled into a narrow driveway, that didn’t look like it would lead to much from the street. The streets in Vietnam seem to be a jumble of everything, with different kinds of shops and restaurants, and other kinds of businesses, all mixed together. I was amazed at what kinds of businesses I randomly came across just walking around or passing on our motor scooter. The 40N on the label refers to the nitrogen level in the sauce. The higher the number, the higher the nitrogen level. This means more proteins and more intense, complex flavours. You can also use it as a tableside condiment, adding it to anything that feels a little bland. For this, I recommend making the most popular Thai condiment, prik nam pla, simply by combining fish sauce with chopped fresh chilies and a squeeze of lime juice. (Ratios do not need to be exact, but you can start with 3 parts fish sauce to 1 part lime juice.) Add some chopped garlic or shallots if you'd like, then treat it like you would tabasco, worcestershire sauce, or salt and pepper! But will it make my food taste fishy? Then to make the final bottle, the first press is combined with subsequent presses at a ratio specific to that brand. So the fish sauce quality is determined by how much of that first press is in the final product.

But, all the while, he missed the tastes of his childhood—what the grocery store had just wasn't it—and set out to find what he and his family remembered so acutely.You can buy vegan fish sauce, but you have to be quite selective because there are some reeeealy bad ones out there. In the video I showed a bottle that is awful, and the ingredient list contains water, salt, sugar, MSG, caramel, "flavor" (whatever that is), and sodium benzoate which is the preservative. It's just a salty solution with artificial flavor added. Most brands will also add a little bit of sugar to help round off the sharpness of the salt for a more balanced flavour. The presence of sugar, in my opinion, is not a bad thing as it's such a small amount and will only help its flavour.
