If you want to bake a small size cake then one good idea would be to make a flying butterfly on the top of the cake. Here is a pink butterfly cake. Put the paper cases into the bun tins before baking begins. Once the batter has been mixed the raising agent (baking powder) is activated, so getting the cakes into the oven as soon as possible is the best course of action to ensure you get light and fluffy buns. Make sure you usesmall paper cases to make your butterfly buns in rather than cases designed for cupcakes. Cupcake cases are much bigger so you’ll get far fewer cakes if you use those (around 6).

Once the cakes are baked, proceed to cut and decorate them as instructed previously, ensuring all additional decorations are suited to a vegan diet. This recipe is tailored for a 5" pan which holds about 1.5 cups. So you'll need to x4 the recipe for an 8" cake. Add another ½ teaspoon blue pea powder to the remaining mixture in the blender and blend to combine. Transfer this mixture into the pan, pouring it mostly to the left. Now use a skewer or a small spoon to lightly swirl the mixtures together. I used a circular motion and went mostly around the edges of the pan to create the sea wave effect. Feel free to improvise -- just don't over-mix or the different layers will merge into one color. Using two dessert spoons (one to scoop and the other to push the mix into the tin), fill the paper cases half full with the batter, filling them equally. There is already a bit of raising agent within the self-raising flour but these butterfly cakes call for an additional bit of lift, just so we can get some nice little wings cut from the top. Blue Spirulina is another possibility. The colour intensity of the spirulina powder is a bit stronger than the Butterfly Pea. Start with 1 teaspoon added to the flour. If the final colour of the batter does not look perfect, you might add also another ½ -1 tsp.

To cut the layers easier, you may want to refrigerate them for 3-4 hours or overnight. That's why I always prefer to make the layers one day before assembling the cake.
