However. I think this sauce tastes even hotter than the claimed Scoville rating. The first ingredient is scorpion peppers, which once held the world record for the hottest pepper on Earth. Tabasco has been making hot sauce on Avery Island, Louisiana for over 150 years. The brand was founded by Edmund McIlhenny in 1868. McIlhenny first created Tabasco as a way to add some flavour to the otherwise bland diet of the time, and the original recipe is still followed to this day.

In terms of heat balance, this isn’t the kind of sauce that’s just hot for the sake of being hot; as mentioned, it has a ton of flavor. And the balance is about just right. Usability Capsicum chinense peppers have a very aromatic flavor with a very high to extremely high pungency. They are therefore also suitable for the production of extremely hot chili sauces and extracts. So it is not surprising that the Scoville scale is led by Blair’s 16 million reserve. The 16 million in the name stands for 16 million Scoville Heat Units. It is not a sauce, but Pure Capsaicin crystals.People don’t expect this level of heat from Tabasco, so it makes an excellent conversation starter. It carries a legend’s name, but with surprise inside! It’s sort of the needed addition to the Tabasco line to give it street-cred with the real hot sauce heat-seekers out there. On the sodium-level: this isn’t a sauce for those looking to curb their sodium intake. Tabasco Habanero has 120 mg per teaspoon serving, which is 5% of your daily allowance. That’s very high compared to the brand’s Original Red (35 mg). Heat Balance It’s also a great addition to any rice or potato by adding a peppery sweet heat that’s very different from original Tabasco. This is, of course, great on eggs (as Tabasco always is.) And it works great as a marinade too, you’ll just have to dash it out for quite a while due to the stopper, but dare I say, the Jamaican taste it will provide makes it worth all the arm soreness. Tabasco also makes a habanero sauce that I think tastes even better than the scorpion sauce. It also has a lower Scoville level, making it more usable on a daily basis.

Habanero peppers sit at the top of the range among true culinary peppers — 100,000 to 350,000 Scoville heat units (SHU). Above that you get into the world of super-hots which are too much heat for most except (except you extreme eaters out there!) If you want to try this unique hot sauce, you can likely find it in the grocery store next to Tabasco original. You can also get it online here for a bit of a markup.
