He knows his girly beverages.I was never (and still am not) really a drinker. You should not ask me what drinks are good because I honestly wouldn’t know. Grenadine floats on the top of the drink, slowly blending into the glass to look like a sunset. Malibu Barbie would love a good sunset! We also really like the strong taste of cherry grenadine in this tangy drink. Keep the tropical taste of this beachy drink in mind when you make any alterations to the recipe. You want to be sure to keep that warm weather, ocean vibe! My go-to drink recipe used to be Gin and Tonic. Specifically Empress Gin and Elderflower Tonic. When you think of Malibu, you probably don’t think of the Royal Crown. (The idea of Colin Firth drinking from a rum-filled coconut is just… wrong.) But it was an Englishman indeed who developed Malibu: Thomas Jago, liquor industry legend who passed away in 2018, was a liquor executive who created both Bailey’s Irish Cream and Malibu, the latter of which was a tremendous effort in rebranding a failing rum called Coco Rico. Jago also went on to develop Johnnie Walker Blue. Malibu Barbie became very popular and has stayed that way since the 70’s. We wanted to create a drink inspired by this beachy, tropical girl. One sip of our Malibu Barbie drink and you will feel like you are at the beach, living the good life, too! What is in a Malibu Barbie Drink? The coconut flavor helps to balance out the ultra-sweet berry blue jello and makes for a refreshing treat. Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Add coconut rum and fold in shredded coconut. I started with my basic vanilla cupcake recipe and added a slew of coconut flavors – milk, extract and rum.

There’s plenty of cool stuff to know about rum production, but key here is knowing that rum can be made from either sugarcane juice or molasses syrup, the latter a byproduct of sugarcane refinement and sugar production. There’s also the harder-to-produce, more agricultural, and delicate “rhum agricole,” comprising an admittedly smaller fraction of the market. As a molasses-based rum, Malibu’s is pretty standard. How much alcohol is in Malibu? Malibu rum is a coconut flavored liquor. Any tropical, fruity flavors will taste good with Malibu. Or course, we skip the rum part and focus on the simple, tasty flavor of coconut. Coconut water is more flavorful and much healthier to drink than rum! This could also be made into a cake, and I think a layer of fruit (think strawberries, pineapple, and cherries) would be perfect.The fictional character that is Malibu Barbie lives at the beach. We wanted to capture that seaside lifestyle with a fruity and tropical drink. Malibu Barbie is also a very girly girl so we wanted to capture that charm with the bright pink color of our drink. If you know someone who likes the taste of coconut, just not the texture, simply leave the shredded coconut out.
